I have been very fortunate in being able to sample much of the varied richness of France available within a few hours of Paris–food, wine, culture and a wonderful group of new friends, colleagues and partners.

From the green, rain-soaked pastures of Normandy, providing cheese and butter for both eating and cooking, to the confit de canard and goose fat of the southwest and ending up in Provence, where olive oil is king, it has been a challenge to keep the weight of and the smile from my face, as I pinch myself to verify that this life is not a dream.

This collection is my way of saying thanks, and sharing with you my many memorable experiences.





Perigord-Pyrenées-Vaucluse

We will be hosted at each of these destinations at a private chateau-no luggage schlepping every day. At the end of each daily adventure we will return to our temporary home and hearth for a relaxing glass of wine or two and a sumptuous dinner.

Périgord

Join me for 6 days and 5 nights in the heart of Le Périgord (April 27 - May 2). We will be welcomed by Krys and Tim BIRCH who cooked at a Michelin starred restaurant in England, at their Domaine de la Barde for elegant accommodations, lavish meals featuring the rich cuisine of the Périgord and local wines.

Pyrenées

Originally constructed as a fortress, the Château de Gère has been a prominent fixture in the Vallée d'Ossau since the 14th century. It has served as the residence of feudal lord Jean de Gère, the hunting lodge of King Henri IV, and home to other noble families. 

Your host, Trish Jasinski was raised in New England, moved to Paris and after a long bout of chateau shopping found this gem.
Situated at the foot of the Pyrénées mountains in southwest France, it’s an ideal setting for relaxing getaways, sporty activities, artistic inspiration, cultural discovery, gourmet indulgence, and more!

Vaucluse

Escape to the south of France for a 4-day culinary and wine immersion at La Bastide Rose estate. Stay in the beautifully restored 18th-century manor house nestled among Côtes du Rhône vineyards.

The Perigord trip offers unique experiences thanks to Terrance's personal connections and attention to detail. Spending quality time lunching with author Martin Walker at his home and seeing unmarked French Resistance locations nearby surpassed my expectations. Staying at the Domaine de la Barde hosted by Tim and Krys Birch was flawless. Chef Tim's delicious (and beautiful) cuisine and tales of renovating the 12th century chateau made every meal a delight. About 20 years ago I was invited to an afternoon cocktail party at Nicole 'Poppy' Salinger's Paris apartment and over the years I had visited La Bastide Rose, 'toured' with Poppy the museum she created to remember her husband Pierre Salinger and sampled Emmanuel's provencal cuisine accompanied by wines from his personal cellar.
Terrance

If you are tired of listening to English in the 51st State of Saint Germain, and no longer wish to stand behind the velvet rope to enter Shakespeare’s Bookstore, come to Trish’s compact and lovely 14th Century Pyrenees chateau for the Laurins Cheese Festival. There you will find a good kilometre of cheese, wine and food tasting stalls, along with the typical goods for sale at rural French markets. Men wear berets without irony and the only English you will hear is from your fellow guests at the Chateau de Gere. Terrence’s good friend Trish is an excellent cook and a knowledgeable guide. She will even show you a Second Empire ghost town of abandoned thermal baths, casinos and hotels. Let Trish and Terrance take you to a relatively unknown part of France that is definitely worth the journey.
