BAEKEOFE is an Alsatian specialty, which is made with cut up lamb, beef, and pork. The meat is first marinated in white Riesling wine all night or 24 hours with garlic, thyme, cloves, salt, and pepper. Peel potatoes and slice them into six slices each. Begin to layer (into a terrine) a layer of goose fat, then potato slices, meat, then onion, carrots, and leek slices until the entire meat and vegetables are layered together. End with a pear on top. Add wine to the top before sealing and possibly pigs feet. Seal the lid into place with a paste of flour and water. Bakefor two to three hours (or all day) in alowoven.
